Toad in the Hole
Who would not love crisp skinned pork sausages, surrounded in a sea of buttery Yorkshire pudding batter? Its a British classic served traditionally with a quick onion gravy and loved by the whole family.
I love to serve this with a side of peas and if I am feeling really naughty, some buttery soft mashed potato!
Why not step it up a notch? If you have some streaky bacon, roll it up and poke in with the sausages. Onion wedges and small tomatoes also add interest and flavour. Don’t pop in too many add ins, you don’t want to compromise on that amazing buttery batter!
Toad in the Hole
Crispy skinned pork sausages with a silky buttery batter. A super easy dinner that the whole family will enjoy!
Ingredients
- 2 tbsp grapeseed oil
- 150 grams plain flour
- 370 grams milk
- 3 large eggs
- 12 pork sausages
- 1 small red onion cut into wedges
- salt and pepper to serve
Instructions
- Pre heat oven to 210° fan
- Add oil into a large ovenproof dish and pop into the pre heated oven to heat
- Once oil is hot, (approx 5 mins) add sausages and onion wedges. Return to oven and cook 25 mins or until lightly golden, turning after 15mins.
- Meanwhile, place flour, milk, eggs, salt and pepper into Thermomix mixing bowl and mix 15 seconds/speed 6. set aside to rest until needed.
- Remove hot dish from oven after the cooking time has finished, then pour batter between the sausages, be careful it will sizzle!
- Quickly return to oven and cook for approx 30 mins or until the batter is golden and puffed. DONT OPEN THE DOOR!
Notes
- Add herbs (such as rosemary) to the sausage baking tray when you add the batter.
- If the batter has stiffened while resting, mix with a spoon and if needed add a splash of milk
- Swap the sausages for veggies
- Use a metal dish if you have one, it heats up so quickly and the result is great!
