Pancake Mix

One of my pantry staples. It makes whipping up a pancake so quick and easy. No butter or eggs; I simply whisk in water and cook it in a dry pan. So many topping opportunities! Easy for the kids to make and always a winner! The Thermomix mixes the dry ingredients perfectly, ensuring that everything is well dispersed.

An easy make!

This mix is made up of basics; flour, baking powder, bicarbonate soda, salt, sugar and milk powder. To make the pancakes, you simple scoop out a cup of the mix and mix it with water. It’s cooked in a dry pan. It’s so easy the kids can do it!

I store a cup measure (you can pick these up from the dollar shops real cheap) in with my mix and have the instructions written on the jar label – making things easy! One cup of the flour mix will make 4 generous pancakes.

Once cooked you add whatever else you love on your pancakes! My ultimate topping is caramel sauce, fresh berries, chopped nuts, a dust of icing sugar, a sprig on mint, and cream on the side ….. oh my!!

Shelf life

This will depend on the date of your milk powder, so check that! The mix can also be frozen for a year.

Equipment

  • TM5 or TM6

Ingredients
  

  • 480 grams plain flour can sub for gluten free flour
  • 80 grams castor sugar
  • 100 grams milk powder Check date
  • 30 grams baking powder
  • 15 grams bicarbonate soda
  • 10 grams salt

Instructions
 

  • Add all ingredients to Thermomix bowl and mix 20 secs/reverse/speed 4. Store in a large airtight container.
  • To make 4 pancakes use a standard cup measure. Add 1 cup of the pancake mix to a mixing bowl and mix in 3/4 cup water. I like to do this by hand, (it takes no time). The batter should be smooth, thick but will still flow off the spoon.
  • Heat a non stick fry pan over medium high heat and pour approx 1/4 cup per pancake into the dry pan. Tilt the pan to spread the batter a little. When you see lots of bubbles, flip and cook the other side.

  • Serve with your favourites – maple syrup, ice cream, fresh fruit etc!
