Scotch Egg Recipe

Scotch eggs are a popular British snack that typically consists of an egg that is coated in sausage meat, breaded, and then deep-fried or baked until crispy.

Traditionally, they are served cold and are often eaten as part of a packed lunch or picnic. They can also be served hot and are sometimes accompanied by various dipping sauces, such as mustard or mayonnaise.

I love to serve mine with my garlic cream sauce or lemon mayo and a side of quick pickles onions!

TIPS FOR SUCCESS

  1. Use good quality sausage meat: The quality of the sausage meat you use can greatly affect the flavour of your scotch eggs. Choose a high-quality sausage meat that is well-seasoned and has a good balance of fat and lean meat. Not too chunky, not too fine!
  2. Boil your eggs just right: Overcooked or undercooked eggs can be difficult to work with when making scotch eggs. Make sure to boil your eggs for just the right amount of time so that they are cooked but still slightly soft in the middle.
  3. Chill your eggs before coating: Chilling the boiled eggs in the fridge for a little while before coating them lightly in flour then sausage meat can help prevent the sausage from sticking to the egg and make it easier to handle.
  4. Don’t make your sausage layer too thick: While you want a good amount of sausage meat to cover the egg, you don’t want to make the layer too thick or it might not cook evenly. Aim for a sausage layer that is about 1/2 cm thick.
  5. Use a shallow bowl for your breadcrumbs: When coating the sausage-wrapped eggs in breadcrumbs, use a shallow bowl or dish rather than a deep one. This can help prevent clumping and ensure an even coating.
  6. Fry or bake until crispy: Whether you choose to fry or bake your scotch eggs, be sure to cook them until the breadcrumb coating is golden brown and crispy. This will help give the scotch eggs a satisfying crunch when you bite into them.

AIR FRYING YOUR SCOTCH EGGS

Yes, you can cook scotch eggs in an air fryer for a healthier version of this dish. Here’s how:

  1. Preheat your air fryer to 190°C.
  2. Prepare your scotch eggs as you normally would, by wrapping boiled eggs in sausage meat and breading.
  3. Lightly spray the scotch eggs with cooking spray to help them brown.
  4. Place the scotch eggs in the air fryer basket, making sure they are not touching each other.
  5. Cook for 12-15 minutes, or until the sausage meat is cooked through and the outside is crispy and golden brown.
  6. Use tongs or a spatula to remove the scotch eggs from the air fryer basket and let them cool for a few minutes before serving.

Cooking times may vary depending on the size of your air fryer and the thickness of the sausage meat. Be sure to check the scotch eggs periodically to avoid overcooking.

STORING YOUR SCOTCH EGGS

Scotch eggs can be stored in the refrigerator for up to 2 days.

To store scotch eggs, let them cool to room temperature, then wrap them tightly in plastic wrap or aluminum foil. Alternatively, you can place them in an airtight container.

When you’re ready to eat the scotch eggs, you can reheat them in the oven at 180°C for 10-15 minutes, or until heated through. Alternatively, you can microwave them for 1-2 minutes, although this method may result in a softer texture.

FREEZING YOUR SCOTCH EGGS

You can freeze scotch eggs for up to 2-3 months. To freeze scotch eggs, let them cool to room temperature, then wrap them tightly in plastic wrap or aluminum foil. Place the wrapped scotch eggs in an airtight container or freezer bag, and label it with the date of freezing.

When you’re ready to eat the scotch eggs, you can thaw them overnight in the refrigerator. Equipment

  • TM5 or TM31
  • Pan for deep frying or an airfryer

Ingredients
  

  • 6 medium eggs
  • 1/2 onion peeled
  • 2 clove garlic peeled
  • 1/2 cup fresh parsley leaves
  • 4 sprigs fresh thyme striped
  • 700 grams good quality pork sausages
  • 2 tbsp Dijon mustard
  • salt and pepper to season
  • 1/2 cup flour for 'breading'
  • 2 eggs for 'breading'
  • 1.5 cups panko breadcrumbs for 'breading'
  • oil for deep frying or spray oil and air fryer

Instructions
 

  • Using the egg boiler mode in the TM6, cook 6 eggs on medium soft. For the TM5 place 6 eggs in simmering basket and steam 11 min/Varoma/speed 1. When finished cool quickly in cold water and peel. Set aside.
  • Add onion, garlic, parsley and thyme to Thermomix Bowl. Chop 3 secs/speed 7. Scrape down
  • Remove sausage meat from casing and add to Thermomix Bowl with the mustard. Season well. Mix 10 secs/speed 8. Check to see if it has mixxed together well if not mix again 5 secs/speed 8.
  • Divide meat into 6 equal portions. lightly flour eggs. Place one portion of meat on some plastic wrap and flatten, using some baking paper on top of the meat to help. Place one lightly floured egg in the centre and gently pull up plastic wrap and form a ball. Repeat so that you have 6 eggs wrapped in meat.
  • Get your 'breading ingredients ready by placing flour in one bowl, lightly whisking 2 eggs in another bowl and placing the breadcrumbs in another bowl.
  • Heat oil in a deep-fryer or wok to 180℃. Fry eggs, turning occasionally, until breadcrumbs are golden and sausage meat is cooked through (6-7 minutes should do it). Be careful as hot oil will spit). Drain on kitchen paper.
  • Serve warm or cold with some pickles and a lemon mayo dipping sauce. Enjoy
