Orange & Poppy Seed Muffins
One of my favourite muffins, especially when they have a dollop of cream cheese frosting on top!
Perfect for breakfast, morning tea or as an any time snack, these light fluffy and tasty muffins are ready in no time. That combination of citrus and poppy seed is wonderful, such a classic combo and is loved by so many.
Have them plain, top with sugared orange rind or my favourite, cream cheese frosting. For a special occasion, pop a block of quality chocolate with an orange flavouring.
STORAGE
These muffins are best eaten within a few days. Store them in a container that breathes a little or a paper bag. This keeps them moist.
You can freeze the ‘naked’ muffins for up to three months. Take one out for morning tea, thaw at room temp, it will be ready in no time. What a treat!
Orange & Poppy Seed Muffins
Equipment
- TM31, TM5, TM6
- 12 hole muffin tin
Ingredients
- 250 grams self raising flour
- 125 grams soft butter room temp
- 160 grams castor sugar
- 2 eggs
- 1 tsp vanilla extract
- 50 grams milk
- 60 grams fresh orange juice
- 2 tbsp poppy seeds
- zest of 1 orange juice
Syrup
- 100 grams orange juice
- 50 grams castor sugar
Instructions
- Pre-heat oven to 160° fan.
- Line a 12 hole muffin tin with liners. Set aside.
- Add flour to Thermomix bowl and turbo a few times to sift. Set flour aside.
- Add butter and sugar to Thermomix bowl and cream 30 secs/speed 4. Scrape down and repeat.
- Remove measuring cup and set to speed 2. While blade is running, slowly add one egg through the hole and then add the other. Once combined, stop the Thermomix and stop the blades from turning.
- Add milk, vanilla and orange juice and mix 15 secs/speed 4.
- Add flour, poppy seeds and zest. Mix 5 secs/speed 5. Check the mix is combined, a few unmixed lumps are ok, important not to overmix!
- Scoop into muffin liners and cook 25 – 30 mins. Test with a skewer; it should be clean when you pull it out. Cool in tin for 5 mins, them remove to a wire rack to cool completely.
- For syrup, add ingredients to Thermomix bowl and cook 5 mins/varoma/reverse/speed 1/ measuring cup off, simmering basket sitting on lid. Check sugar has melted into the juice. Using a fine skewer, poke holes in the warm muffins and spoon syrup over each muffin.
- Decorate muffins if desired.
