Lavash Crackers
My Lavash crackers are thin, unleavened flatbreads with a crisp texture. Originating from the Middle East, they are made with basic pantry ingredients: flour, water, salt, and oil. These super easy crackers are commonly used for dipping, topping, or serving alongside various dishes, adding a simple and satisfying crunch to snacks and meals.
In my house a grazing or cheese board will never be without them! Expensive to buy, super cheap to make and a perfect gift!
Flavour
You really can add any spices or herbs to the Lavash before baking. Think cumin, paprika and garlic powder for a nice spiced version. Sprinkle on seeds or finely grated parmesan. Sea salt and rosemary are another lovely combination as is honey and walnuts.
Make a batch and make up a number of toppings to find your favourite. I love my ‘Sprinkles’.
Serving Ideas
Lavash crackers are incredibly versatile and can be served in various ways. Here are some serving ideas:
Dipping:

Storing
To maintain the freshness and crispness of lavash, it’s important to store it properly.
- Airtight Container:
- Place lavash in an airtight container to protect it from exposure to air. This helps prevent the crackers from becoming stale or losing their crisp texture.
- Cool and Dry Environment:
- Store the airtight container in a cool, dry place. Exposure to humidity can cause the lavash to absorb moisture and become less crisp.
- Avoid Direct Sunlight:
- Keep lavash away from direct sunlight, as prolonged exposure to sunlight can affect its texture and flavour.
- Separate Layers:
- If you are stacking multiple pieces of lavash, consider placing a sheet of parchment paper or wax paper between the layers to prevent them from sticking together.
- Freezing
- Lavash can be frozen for longer-term storage. Place the lavash in a freezer bag, removing as much air as possible before sealing. Thaw at room temperature when ready to use.
- Re-Crisping (If Needed):
- If your lavash loses some of its crispness, you can re-crisp it by briefly placing it in a preheated oven (170°C) for a few minutes. Keep a close eye on it to prevent burning.

- TM5 or TM6
- 3 Baking lined trays
- Rolling Pin
- Baking paper
Ingredients
LAVOSH
- 210 grams plain flour
- 1 tsp sea salt flakes
- 20 grams olive oil
- 100 grams warm water
- my savoury sprinkles
SPRINKLES
- 2 tbsp white sesame seeds
- 2 tbsp black sesame seeds
- 2 tbsp nigella seeds
- 2 tbsp flaked sea salt
- 2 tbsp poppy seeds
- 2 tbsp dried minced garlic
- 2 tbsp dried minced onion
- 1 tbsp chilli flakes optional
Instructions
LAVASH
- Add all ingredients to Thermomix® Bowl and mix 10 secs/speed 10. Scrape down sides of bowl.
- Knead using the dough mode for 30 seconds.
- Tip dough onto a Thermomix® Baking Mat and shape into a log. Cut into 8 pieces using the Stainless Steel Dough Cutter
- Cover pieces with a damp tea towel and take one piece to work on.
- Cover dough with a piece of baking paper and roll that piece until it is less than 1mm thin. If using the Thermomix® Baking Mat, you should be able to see the print through the dough. Remove baking paper and sprinkle on 'sprinkles'. Replace baking paper and gently roll sprinkles into the dough. Place on a lined baking tray. Continue with the other 7 pieces.
- Lightly brush each piece with olive oil. Bake at 170℃ (fan) for 20 – 25 minutes until lightly browned. Cool on a wire rack and enjoy!
