Golden Granola

This is my go to granola recipe with all the things I love in it. I have had so many people message me to say how much they LOVE it!

Don’t just think breakfast, it makes a wonderful snack any time of the day. I usually have it on display in a pretty jar in my kitchen and find myself taking a ‘nibble cluster’ as I pass. It is a perfect addition to yogurt, and gives crunch to desserts.

Quality store bought is just so darn expensive and often full of things I don’t really enjoy. As well as being cheaper, I love that I can control the sweetness and crunch in my own Thermie made granola.

Put your own mark on my granola, add and swap nuts, seeds and fruit so you find your own perfect blend. I am thinking you won’t need to once you try my blend!

I love clumps of granola, do you? They are perfect for nibbling! To get more clumps in your granola:

  • Don’t pop the granola in too large a baking pan, you it to be cosy and a wee bit crowded.
  • Press the granola down gently halfway through baking. with the back of a silicone spatula.
  • Make sure that you let your granola cool completely before breaking it up, this is a hard one!

SWAP IT OUT

Make it you own by swapping the nuts, seeds and fruit to the ones you love:

  • Add freeze dried raspberries or dried blueberries
  • Use orange zest, almonds and sultanas for a citrus blast
  • Add some spices; cinnamon and cumin are lovely!
  • Dried cherries, chopped dried apricots or a teaspoon of vanilla extract for more sweetness.

  • TM 31, TM5 or TM6

Ingredients
  

  • 60 grams coconut oil
  • 80 grams pure maple syrup
  • 80 grams honey
  • 250 grams oats
  • 40 grams shredded coconut
  • 30 grams sesame seeds
  • 30 grams chia seeds
  • 30 grams pumpkin seeds
  • 60 grams raw cashews
  • 40 grams craisins
  • 1 tsp salt flakes

Instructions
 

  • Pre heat oven to 160° fan force.
  • Line a large oven tray and set aside.
  • Add coconut oil, honey and maple syrup to bowl. Cook 2 mins/90°/speed 2.
  • Add remaining ingredients (except salt) and mix 30 secs/reverse/speed 3.
  • Tip onto lined tray and spread out in a 'cosy' even layer. Sprinkle with sea salt flakes.
  • Bake for ten minutes and then gently mix and turn mixture; patting it down in a 'cosy' layer.
  • Bake for a further 15 mins until golden brown. Remove from oven and allow to cook completely before breaking up.

Notes

  • Change up the seeds, dried fruit and nuts to the ones that you love the most!
  • Make some for a friend to cheer them up and dress your jar with a pretty ribbon, label and kind words.
  • Enjoy as a cereal at breakfast time with your favourite milk. Use as a topping on porridge or yogurt. Enjoy as a trail mix, a garnish for desserts or a yummy go to snack.
  • Golden Granola will last 2-3 weeks in an airtight container
  • You can freeze this Granola for up to 3 months.
