Cheese & Bacon Rolls

Fluffy rolls, topped and stuffed with cheese and bacon …. what more can I say except that they are super easy in the Thermomix and a rotation must on any weekly meal plan!

Of course you can leave the bacon out, maybe stuff with some wilted spinach and cheese or even pineapple. Endless possibilities!

Cheese and bacon rolls are best served warm. Enjoy them straight out of the oven or reheat them briefly before serving.

Reheating & Storing Cheese and Bacon Rolls

  • After they have cooled, pop them in the fridge if you are not eating them with two days. They will last longer this way.
  • Once completely cooled, store them in freezer bags to prevent them from drying out.
  • Freeze them if you do not plan to eat them within a few days. Leave out to defrost and then reheat in the oven or in a microwave with a wet piece of kitchen towel over it. 15 secs is usually long enough. If you do heat from frozen add a little more time.

Equipment

Ingredients
  

  • 1 1/2 tsp instant yeast
  • 2 tsp white sugar
  • 280 grams warm water
  • 480 grams bakers flour
  • 1 tsp salt
  • 1 tsp bread improver
  • 1 tbsp olive oil
  • 1 egg
  • 200 grams bacon chopped and fried for a few minutes
  • 200 grams cheddar cheese grated
  • 50 grams melted butter

Instructions
 

  • Add yeast, sugar and water to Thermomix Bowl and mix 20 secs/speed 4.
  • Add bakers flour, salt, bread improver and olive oil. Mix 5 secs/speed 5.
  • Select Dough mode and mx for 3 mins.
  • Transfer to a Thermomix® Baking Mat. Shape into a ball . Wrap loosley in mat and let rise until double in size – about 1 hour. If you don't have a Thermomix® Baking Mat, transfer to an oiled bowl, cover in plastic wrap and let rise until double in size.
  • Once the dough has doubled in size, punch down and cut into 10 pieces. Flatten each piece slightly and fill with 1 heaped tbsp cooked chopped bacon and I heaped tbsp grated cheese. Fold in the edges to form a ball and roll to create a smooth bread roll. Repeat with remaining pieces.
  • Lay each roll onto a lined baking tray, 1cm apart. Cover with a damp tea towel and let rest for 30 mins.
  • Pre-heat oven to 180℃
  • Slit the rolls with a lame or sharp knife. Brush with egg and sprinkle on the remaining cheese and bacon. Cook at 180℃ (fan), for 15 – 20 mins or until the cheese has melted and is golden.
  • Remove from the oven and brush with a little melted butter. Enjoy!
